Baking Principles

(Bread, Cake and Pastry)

Course Objectives
The course aims to provide students, pastry cooks and baking enthusiasts with the knowledge and function of ingredients, dough processing, techniques and practical hands-on production in all the three areas of baking for bread, cakes and pastries. Theoretical input is included in the three courses.

Course Syllabus
• Knowledge and function of ingredients
• Formula construction and baking calculation
• Mixing and processing techniques (dough mixing)
• Baking skills and product finishing
• Product assessment and evaluation
• Hygiene and food handling and work safety procedures
Course Duration
Three modules, each consisting of 8 hours per lesson.

Certification
Students who have successfully passed both the theory and practical assessments for bread, cake & pastry modules will be awarded this Certificate.
